What is Celiac Disease?

Celiac disease is a condition that affects approximately one in 133 Canadians and can occur at any age.  Celiac disease causes people to react to a protein called gluten.  If individuals with celiac disease eat foods that contain gluten, it damages the lining of the small intestine.  Ingesting gluten may or may not cause symptoms, but it still causes intestinal damage.  It is unknown why people develop celiac disease.  It is thought to be linked to genetics and environmental risk.  However, it is still not entirely clear.
